2016 Estate Chardonnay
Sourced entirely from our South Block of French (Dijon95) clones. Selected and harvested by hand from mid September through early October, fruit was whole cluster pressed and small lot fermented in a mix of stainless steel and French acacia barrels for over 60 days. The wine matured on lees for three months prior to bottling, with no Malolactic fermentation.
Taught acidity and minerality. Ripe white peach, citrus and floral notes, with hinds of gunflint and crushed lobster shell.
